Ingredients:

1 1/4cups sugar
1/2cup margarine or butter softened
1 1/2cups banana 3 to 4 medium
1/2cup buttermilk
1tsp vanilla
2 1/2cups flour
1tsp baking soda
1tsp salt
1/2cup chopped nuts optional

Directions

Preheat oven to 350°.

Mix sugar and margarine in large bowl. Stir in eggs until well blended.

Add bananas, buttermilk and vanilla. Beat until smooth.

Stir in flour, baking soda, and salt just until moistened. Stir in nuts.

Pour into 9 x 5 x 3 inch loaf pan previously sprayed with Pam. Bake 1 hour 20 minutes at 350°.
Cool 5 minutes in pan on wire rack. Cool completely before slicing. Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.

Notes
No buttermilk on hand? Mix 1 ½ tsp. lemon juice or white vinegar and enough milk to make ½ cup. Or substitute ½ cup plain yogurt.
