3ripe tomatoes blanched | |
Extra virgin olive oil | |
4medium garlic cloves | |
3tbsp fresh basil |
Directions

Blanche tomatoes. Combine tomatoes and basil into small food processor. Do not chop too small. Mix together and set aside. Add minced garlic to olive oil. Heat oil/garlic mixture for 1½ minutes in the microwave. Add a small amount of the olive oil to the tomato mixture. Refrigerate both mixtures for a few hours.

Slice bread and brush with drained olive oil. Broil slices until lightly toasted. Rub slices with peeled garlic. Top with tomato mixture and a bit more olive oil. Serve.
